The flavors, the aromas, and the vibrant colors of dishes like phuchka, jhal muri, and kati rolls have been an integral part of my life. The First Experiment

My first foray into cooking was both a disaster and a revelation. At the tender age of six or seven, I decided to make tea for my parents. Known for my love of experimentation, I thought adding Maggi Masala, a seasoning for noodles, to tea would be a brilliant idea. The outcome, as you can imagine, was far from pleasant. My parents’ faces after taking a sip told me everything I needed to know. It was a humbling experience, but it sparked a curiosity and passion for cooking that would only grow stronger.

Learning from the Best

My mom has been my greatest teacher in the kitchen. She used to tell me that when I moved away for my studies, I would miss her cooking, known in Bengali as “Mayer hater ranna” (mother’s hand-cooked food). She was right. Motivated by the thought of missing her dishes, I began to learn from her. She taught me the essentials of cooking, from preparing basic rice and lentils to making elaborate festive dishes.

Expanding Horizons

As I grew older, my culinary skills expanded beyond traditional Bengali cuisine. I delved into Chinese cuisine, learning to make dishes like stir-fried noodles and sweet and sour chicken. The vibrant and diverse flavors fascinated me, and I found joy in replicating and tweaking recipes to suit my taste. Spicy foods were always a favorite, and I loved experimenting with different spices and ingredients to create something unique.

The Importance of Practice

There’s a saying that practice makes perfect, and this couldn’t be truer for cooking. With each attempt, my dishes began to taste better. I learned from my mistakes, honed my skills, and discovered the joy of sharing my creations with family and friends. Cooking became more than just a necessity; it became a passion and a way to express myself.

Embracing the Future

Today, I continue to experiment and learn new recipes, always striving to recreate the beloved flavors of my childhood while also exploring new culinary horizons. The journey from making a disastrous cup of tea to crafting delicious meals has been one of growth, learning, and a lot of fun.

Cooking, for me, is a blend of science and art. It’s about understanding flavors, experimenting with ingredients, and creating something that brings joy to others. Whether it’s a traditional Bengali dish or a spicy new creation, the love for food and cooking continues to be a delightful adventure.
